For many people, buying frozen lobster is preferable to buying it live. If you buy live lobster, you have to cook it quickly. By buying it frozen, you give yourself some time for errors. If something comes up and you can’t cook the lobster on the night you wanted to, it’s no big deal.
The most common type of frozen lobster you will find is frozen lobster tails. If you buy frozen tails, try to get them from a reputable store. Some places will inject water into the shell before it is frozen. This helps preserve the tail, but you are also paying for frozen water instead of lobster meat.
Also, look for discoloration on the tail. This includes any areas of graying on the shell, along with black or yellow spots in the meat. If you see anything about the frozen lobster that you think doesn’t look good, don’t buy it. Keep looking, and you’ll find something good.
