When purchasing fillets or cutlets, it is important that you look for
the little things that will let you know if the purchase is worthwhile.
You should check the flesh to see if it is bright and lustrous. The
flesh of a fish caught recently should still have some elasticity to
it, but should also be firm. If there is any dark muscle included in
the meat, it should be a pinkish-red color. The smell should also be
bearable. Some would say that no dead fish smells great, but the smell
should at least not be pungent.
