If you are buying fresh seafood, you can use the following tips to ensure that you are getting quality fish.

• Clear eyes – When buying fresh seafood, one way to make sure the fish you are buying is really fresh is to check its eyes. The fish’s eyes should be clear. If the eyes are cloudy, this means the fish was caught more than five days ago and it is starting to get old.

• What’s under the hood – The interior of the gills should be bright red. If the gills are a pinkish or brownish-gray color, this means that the fish has been mishandled or is getting old. Either way, it isn’t fresh seafood.

• Check the smell – Fresh seafood should not have an offensive odor. It should smell moist and fresh and be comparable to a cut cucumber or melon. An unusual odor usually signifies that the fish is old.

• Firm is good –The flesh of fresh seafood should be firm and retain elasticity, meaning it should “spring back” into place. If an indention remains after it is touched, this means that it is getting soft and old.

By using these tips when looking for fresh seafood, there is a great chance you will be able to find some delicious selections.
