Fresh Fish
Although there are many methods that could be used to
prepare fresh fish, here are some explanations about the top methods.
• Grilling – When grilling, it is best to lightly brush
a piece of fresh fish with oil and then place it on a grill, but away
from the hottest part of the fire. The fish will begin to release some
of its own natural juices after a couple of minutes. This should keep
it from sticking. Turn the fish over when light grill marks appear.
This should only take a few minutes on each side.
• Broiling – When you broil fresh fish, you should use
high temperatures and a direct heat source. The broiling process gives
the cook better control over the heat and allows him to use a basting
sauce without needing to worry about dripping on the coals or the gas
source of a grill.
• Baking – Baking is another easy way to prepare fresh
fish. To bake, rinse the fish under cold water, pat it dry and then
place it in a shallow baking dish with the skin side down. Flavor can
be added with salt, pepper, butter, olive oil or sauces. To avoid overcooking,
bake at 425 degrees for 6-12 minutes per each inch of thickness.
Poaching, sautéing and steaming are also popular methods for
preparing fresh fish.
